Spring Greens and Asparagus

We only have two more markets before our summer season begins!

We will return to a weekly market schedule beginning on May 3rd at 9am. You can shop at our last two winter markets scheduled for this Saturday, April 12th AND on April 26th from 10am-2pm. Make sure to stop by the Information Booth for a summer season bookmark!

This week we have 50 vendors joining us and if you’re starting to think about Easter brunches or dinners, our vendors will have plenty of ingredients for your spring festivities. We are thrilled to share that RJ Farms will have their first crop of asparagus available this Saturday! Don Felipe Chorizo is scheduled to return so stock up on their amazing line of handcrafted chorizo (available in a plant-based option, as well).

April 26th is our book fair! We have received some incredible book donations so please come and shop. Kid’s books will be 1.00 while grown up books are 3.00. All proceeds will go to our Power of Produce club for summer activities.

SEASONAL CROP HIGHLIGHT

Nettles!
Primarily a foraged crop, nettles are packed with vitamins and minerals and are prolific in the early months of spring. You may also know them as “Stinging Nettles” but don’t let the stingers scare you off!

Here’s why:Nettles have a sweet, savory, earthy flavor similar to spinach or amaranth but very uniquely nettle flavored. They make for a very rich, creamy, nourishing tea and once cooked/processed to remove their stingers they can be used just like any other green. They’re delicious topped on pizzas, served in pasta or made into pesto

TIP: To separate the leaves from the stems, wear thick rubber gloves before blanching the leaves to remove the acids that cause the sting

This Saturday Storybook Farm will have their freshly harvested Nettles available at Full Circle Farm’s booth. We’ve included a quick and easy recipe (link below) for Nettle Pesto so you can enjoy this delightful spring crop.

46% of college students are experiencing food insecurity.
This Saturday from 10am-2pm Clackamas Community College’s Foundation (a 501(c)3 non profit organization) will be hosting a booth at the market collecting non-perishable food items to stock their on-campus food pantries.

Pantry staff have expressed need for the following items:

Canned Tuna and/or Chicken
Shelf stable single serve meals
