Grilled Peaches with Raspberry Sauce

Ingredients:

Grilled Peaches

  • 1 stick unsalted butter, at room temperature
  • 1 teaspoon cinnamon sugar
  • 2 tablespoons granulated sugar
  • Pinch salt
  • 4 ripe peaches, halved and pitted
  • Spray with oil or brush with butter
  • Options: Raspberry sauce, caramel sauce, granola, mascarpone

Rasberry Sauce

  • 2 pints raspberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 Tbs of corn starch
  • Option: splash of Merlot, Courvoisier, Cassis or berry liquor
  • Top with soft goat cheese or other soft cheese

Directions:

Grilled Peaches

  1. In a small bowl add the butter and stir until smooth. Add the cinnamon sugar, granulated sugar and salt and mix until combined.
  2. Heat grill to high. Brush peaches with oil and grill until golden brown and just cooked through. Top each with a few teaspoons of the sugar butter.

Raspberry Sauce

  1. Combine corn starch and sugar together, add berries into a saucepan. Cook on low, until raspberries are broken down, about 10 minutes. Remove from the heat to cool.
  2. Top grilled peach halves with soft cheese and berry sauce….Enjoy
