Balsamic Cherry Preserve
Ingredients:
- Quart dark cherries
- ½ cup sugar
- 2 Tbsp Balsamic vinegar
- Pinch of salt

Directions:
- In medium non-reactive saucepan, combine cherries and splash of water. Bring to boil, stirring and crushing the cherries with back of wooden spoon. This breaks up fruit and releases the juices.
- Once boiling, add sugar, vinegar and salt. Decrease heat slightly and cook at medium boil..not a crazy boil, but more than simmer. Stir frequently, crushing cherries. Cook for 20 mins.
- Turn off heat and let rest for 5 mins. Stir one final time.
- Ladle into hot, sterilized jars, leaving ¼” headspace.
- Process in boiling water bath for 5 mins…or refrigerate.
Delicious with ice cream, whipped cream or stirred into plain yogurt
