Balsamic Cherry Preserve

Ingredients:

  • Quart dark cherries
  • ½ cup sugar
  • 2 Tbsp Balsamic vinegar
  • Pinch of salt
  • Quart dark cherries
  • ½ cup sugar
  • 2 Tbsp Balsamic vinegar
  • Pinch of salt

Directions:

  1. In medium non-reactive saucepan, combine cherries and splash of water. Bring to boil, stirring and crushing the cherries with back of wooden spoon. This breaks up fruit and releases the juices.
  2. Once boiling, add sugar, vinegar and salt. Decrease heat slightly and cook at medium boil..not a crazy boil, but more than simmer. Stir frequently, crushing cherries. Cook for 20 mins.
  3. Turn off heat and let rest for 5 mins. Stir one final time.
  4. Ladle into hot, sterilized jars, leaving ¼” headspace.
  5. Process in boiling water bath for 5 mins…or refrigerate.

Delicious with ice cream, whipped cream or stirred into plain yogurt
