Have you seen the weather forecast for Saturday’s market? In addition to the fact Halloween is this weekend, the forecast looks like a sunny one! Plan on attending the market for our last Saturday of summer season. Winter market begins right away on November 6th and our opening time will change to 10am. We have 73 vendors signed up for winter! Tis the season for roasting veggies and winter squash. Slow roasting allows their flavor to shine, coaxing out a natural sweetness and deep, rich flavor. Eat on their own, add to soups or stews, top on grain bowls or add to mixed green salads. It’s a must have this time of year and our farms are laden with options. Best of all, it’s so easy. Simply cut up roast at 400 degrees, doused in plenty of olive oil, salt and pepper until browned and fork tender. Make a big batch at the beginning of the week and pull out for easy meal prep. It’s quick way to add nutrient dense foods to your plate.
