Celebrate Winter Chicories

The market is open this Saturday from 10am-2pm!

The weather is looking cold and sunny, a perfect opportunity to get fresh air and fresh food at the market.
This week we’re sharing about the beautiful vegetables known as Winter Chicories and if you haven’t added them to your winter menu, now is the time.

We have a few farms joining forces this Saturday! Storybook and Wild Roots Farm will be teaming up for another shared booth offering all the winter veg you could hope for, in addition to seasonings, teas, pickled onions and more.

Stewards Valley, Farm D’ICI and Farrah Farms will all be under one canopy this week. Farm D’ICI will be selling Farrah’s eggs and microgreens, plus Steward’s freshly roasted coffee beans. It’s a great way for farms to coordinate if they can’t be physically present at the market.

We’re located at Clackamas Community College’s GREEN LOT 1 here in Oregon City. Easy access off the corner of S Beavercreek and Clairmont Drive.
TriMet Bus Line 32 stops next to the market, as well.

What are Winter Chicories?

In the US, most radicchio (chicories) found on grocery store shelves is California-grown, round, red Chioggia-types, but there is a lot more to the Cicoria story! Farmers in the PNW are growing a much wider variety of radicchio types including Treviso, Castelfranco, Lusia, Verona, Rosa, and chicory types including Puntarelle, Catalogna chicory, and escarole.Known in Italy because they’re often used in Italian cuisine, the chicory family is a wide and varied group-they can be loose-leafed or tightly headed, tapered or round, smooth-leaved or frilled. They are also brightly colored, ranging from purest white and pale yellow to bright green or maroon. All members of the chicory family are favored for the bitterness that they all share, unlike lettuces which are chosen for their delicacy.

The bite and texture combine nicely with richer ingredients in salads, like nuts, fruits, and sharp cheeses or smoked salmon, chicken, or ham.

They prefer cool weather and are at their prime in the fall. While they can be bitter raw, adding an acid such as lemon juice or vinegar can mellow the flavor and cut the bitterness. Honey adds a sweetness that pairs beautifully with the sharp flavors. Also, soaking the leaves in an icy cold-water can help remove some of the bitter overtones.

We’re so lucky to have these amazing varieties at the market. Wild Roots Farm, Storybook Farm and Sun Love Farm are known for their expansive assortments so plan on trying out a few and see what you think!
