Can You Handle the Pressure?

By 11 July 2024

It’s Canning Season!

It’s hard to consider canning when we’ve been dealing with so much heat, but the temps are forecasted to drop to more bearable temperatures. This week OSU Master Preservers will be here to test pressure canner gauges and if canning isn’t your thing, we have good news. Pam’s Pickled Products is back with delicious, pickled veggies and relishes so you can save yourself from the work!

The market has been vibrant and colorful as it boasts the bright colors and flavors of summer. Stone fruits are in season, and we saw our first crop of peaches this past Saturday, in addition to ALL the berries. Marionberry season is quick so you will want to make sure and purchase Oregon’s quintessential fruit this week.

Cucumbers, tender and crisp summer squash and the first of tomatoes are showing up in farmer’s stalls along with loads of sweet carrots, red potatoes and flavorful leafy greens. Bring an extra shopping bag because you will need it!

This Saturday we’re partnering with Clackamas Free Clinic (located right next to our market) for their Health Fair. You can read more details in this newsletter but if yoga under the shade trees and information on lifestyle medicine sounds up your alley, you will want to be here!

Finally, we have a long list of vendors who have been off for a week or two and are returning this Saturday. We’ve provided a full list PLUS a link where you can see our entire list of attending vendors.

Find us each Saturday from 9am-2pm at Clackamas Community College’s GREEN LOT 1 here in Oregon City (we are off the corner of S Beavercreek Rd and Clairmont Drive)

See you at the market!

The OSU Extension Service presents “Pressure Can It Right!”

OSU Master Food Preserver volunteers will be at the market this Saturday, July 13th to test pressure canner gauges.  The test is free.  Only the lid is needed.

Why test your gauge?

Over time, the calibration of a dial gauge on a pressure canner can become inaccurate.  If the pressure reads lower than that recommended for processing, the internal temperature of the food will not be adequate to kill bacteria and spores, including botulism.  It is recommended that you test your pressure canner gauge at the start of each canning season to ensure that the pressure reading on the gauge is accurate.  Pressure canners with a weighted gauge do not need to be tested for accuracy.

While you are at the booth, take a few minutes to review the home food preservation resources that are on display. We are also happy to take your questions.   See you there!

As we shared, we’re excited to welcome Pam’s Pickled Products this Saturday for their season debut. We’ve been eager for their return and with good reason! Pam creates delicious relishes and pickled veggies using our farmer’s produce, such as RJ Farms. This week you can plan on Pickled Asparagus (both sweetened and unsweetened), Pickled Garlic, Sweet Red Onions and their infamous Old Fashioned Zucchini relish. Green Beans are coming once harvest is in full swing.

You can find Pam’s between Forest Edge Vineyard and Fulton Family Farms this Saturday.

Join Clackamas Free Clinic for their Health Fair from 10am-2pm this Saturday. Come for yoga/pilates, blood pressure and glucose checks, lifestyle medicine mini consultations and information on patient services and how to volunteer.

This is a fantastic resource for our community so we hope you will support by learning about their programs and what they offer for folks lacking medical care.
