Master Food Preservers and Hound Me Downs!

By 14 September 2017

Nothing says late summer like Salsa! Stock up on tomatoes and freeze them for winter.

While the dry weather lasts…..come out and enjoy the day at the Market! “Tis the time for preserving so let the Master Food Preservers inspire you to take home more than usual and preserve it for the winter. This week they are bringing samples of salsa…with recipes. The tomatoes are glorious right now, but not for much longer as rain can cause cracking and the onset of disease, which signals the end of the crop. Sun Love Farm is offering $20 for 10 lbs of heirlooms if you are interested in stocking up.  Have the freezer space?  One easy way to preserve tomatoes is to de-stem them and freeze them whole, that way when they defrost the skin comes off easily!

Corn makes a delicious relish! Try the recipe this week:)

We still have corn and the following recipe has become a OC Market staple. Introduced by Barb (our POP Club star!) a few years ago, and now info booth volunteers, board members and even vendors use this recipe to stock up jars of  zesty relish which is delicious with a variety of foods….https://www.foodiewithfamily.com/zesty-corn-relish-canning/ The good thing is YOU make it as zesty or spicy as you like. Don’t like heat? Use all sweet red and green bell peppers. Love heat, then add more hot peppers and less sweet, just make sure the total amount of peppers is the same as in the recipe.

Lots of sweet peppers coming, but a change in the seasons is in the air. Buy extra peppers this week and slice and freeze!

With the change in early morning temperatures cool weather crops are making their way into the Market. Sun Love Farm will have fresh-picked broccoli, green cabbage, napa cabbage, lacinato kale, and Russian kale. Brown Bottle Farm, is taking a double booth this week to showcase their preserves, they’ll have samples, so stop by! And apart from loading their tables this week with sweet red peppers (easy to cut up and freeze to add to winter soups, stews etc), they are bringing the first fall fungi….Chicken of the Woods!  Sliced thin and cooked well butter or oil  (try Spear and Arrow’s Shallot and Thyme Ghee…which is also fab smeared on hot corn) with garlic and white wine. Serve on top of crusty bread slices. This recipe looks good too: https://www.washingtonpost.com/recipes/chicken-of-the-woods-mushrooms/12364/?utm_term=.1398ab9fbcda

More apple and pear varieties this weekend!

Coyote Ridge Farm has beautiful radicchio and escarole again as well as bunches of carrots, beets and yes, more sweet red peppers! Radicchio pairs well with blue cheese or feta, and it’s an easy plate of food to make.  Heavenly drizzled with a honey vinaigrette and topped with finely chopped sweet onions, apple or ripe pear and sprinkled with toasted walnuts. http://www.elizabethminchilliinrome.com/2016/01/radicchio-salad-blue-cheese/ And talking of apples and pears…more varieties coming from Kiyokawa Orchards this week ( including Gala, Ginger Gold, Zestar Mcintosh and the two real popular ones…Tsugaru and the red-fleshed beauty,Tokyo Rose). Next week is our Apple Tasting. You get to vote on your fave and we see which farm wins 2017 Best Apple Taste Test!

Oregon Albercore available will be available, as well as Salmon, Rock Fish, Sole, plus Shrimp, Crab and Steamer Clams!

Just in…Wild Oregon will have a ‘boat-load’ of Oregon Albacore Tuna…plus Chinook , Coho and other seafood treats. You can order your Tuna for canning or freezing this weekend from Robin. The Master Food Preservers still have classes available…and one is on Tuna Canning (Sept 30th).  Check out what food preserving classes are still available here:   http://extension.oregonstate.edu/clackamas/sites/default/files/2017_specialty_registration_1.pdf
