It’s early March and winter is dragging on with no sign of a spring warm up. That teaches us to get creative with the produce at hand, so all is not lost! Cold, wet weather is holding off any spring veggies for now, however winter squash is available and so versatile. Squash and spinach curry is delicious and warming. It can be served with rice, and dressed up with Diana’s Delights Tomato and Red Pepper Chutney, (or her Apricot Orange Chutney) and a spoon of the Hummus Stop’s Tzaziki (yoghurt, mint, cucumber) salad would round it off. Fisher Ridge Farm’s beef can be ‘corned’ for St Patrick’s Day by soaking in a brine , brisket is the usual cut to use , but any cut can be brined. Corned beef’s usual bright pink color is due to soaking in saltpeter, or nitrates. If you want to skip those here’s this recipe:  https://wellnessmama.com/4420/corned-beef-brisket/ . Serve with creamy mashed potatoes and horseradish sauce.  Pitkin Winterrowd Farm has fresh horseradish this weekend. Grate, add a little vinegar and cream to taste to make the hot sauce. Wild Oregon has Razor Clams Saturday (good for St Paddy’s Day, they are eaten a lot in Ireland too!), along with fresh Sole, Black Cod, Rock Fish and more. Plus Crab, Steamer Clams and frozen fish …on sale.

Kiyokawa Orchards are sending 23 (wow!) different varieties of apples and pears. A personal fave to bake right now is Betty Crocker’s Easy Apple Cake made with Ambrosia Apples (cutting back on the cinnamon and adding a teaspoon of cardamon instead, gives it a complex flavor). http://www.bettycrocker.com/recipes/easy-apple-cake/5427daa2-21ac-4b09-bb6e-4c24437500ce   RJ Farms has plenty of pastured eggs for baking, and Bob’s Red Mill’s gluten-free flour (1 to 1 mix) can be substituted for wheat flour if that’s a problem, just allow for more baking time. Serve with whipped cream-of course! Or pick up a heavenly butter-crust fruit pie from the Pie Guy and just heat and serve:)
