It’s early March and winter is dragging on with no sign of a spring warm up. That teaches us to get creative with the produce at hand, so all is not lost! Cold, wet weather is holding off any spring veggies for now, however winter squash is available and so versatile. Squash and spinach curry is delicious and warming. It can be served with rice, and dressed up with Diana’s Delights Tomato and Red Pepper Chutney, (or her Apricot Orange Chutney) and a spoon of the Hummus Stop’s Tzaziki (yoghurt, mint, cucumber) salad would round it off. Fisher Ridge Farm’s beef can be ‘corned’ for St Patrick’s Day by soaking in a brine , brisket is the usual cut to use , but any cut can be brined. Kiyokawa Orchards are sending 23 (wow!) different varieties of apples and pears.
