The late summer of plenty!

This will be the second to last Wednesday Market…make use of it to pick up some ideas for mid-week meals. Parsons Farms have an abundance of produce right now…find the time to can, freeze, dry or pickle, you’ll be happy in the Winter seeing a pantry/freezer stocked! They still have plenty of peaches,tomatoes,peppers,zukes, green beans,corn, onions…and now the early fall apples and pears too.
Pasta is a quick easy dish, add any of the summer veggies for a nutritious plate of food. Try White Star’s recipe below:

Easy peasy…

September Pasta Salad

1 lb package cooked, cooled and lightly oiled pasta of your choice

4 tbsp pesto
2 cups summer squash cubed and lightly sautéed
¼ c sundried tomatoes sliced
3 tbsp pine nuts
Salt and pepper to taste
¼ c fresh grated parmesan
Toss the pasta through the pine nuts  together in a large bowl.  Salt and pepper to taste.  Serve with fresh grated Parmesan on top.

White Star Farms are coming Wednesday a lovely selection of summer squash, all perfect for the September pasta salad.  Jars of dried tomatoes from the farm will also be available at the booth this week, and they’ll be sampling the addictive Padron Peppers.. ..tossed in olive oil, eaten barely cooked and sprinkled with coarse salt..heaven on a hot evening with a glass of wine!

Local honey, great for the immune system and allergies.

Parsons and White Star Farms will be joined by Albeke Farms and Food Forest Farms bring more produce ,locally raised pork and honey. The Hummus Stop will be there as will Big Foot Bread (they promise this week!).

Fresh cut flower bouquets, by C and K Flower Farm, wine by the bottle and glass from Kings Raven Winery , fresh fruit smoothies by the Fresh Start Cart and delicious empanadas cooked fresh at the market by Mitzil Restaurant.

Plenty of tomatoes too….

Music is not to be missed…a fave market musician and singer, Tiffany Carlson will be playing from 3-6pm. Gorgeous afternoon, early evening predicted this Wednesday…how many more? Get out and enjoy the last throws of summer at your local farmers market!

    I really appreciate it when you print a recipe with the food that is available at the market. It gives me the incentive to make the suggested dish that weekend, plan ahead and know the produce will be there for that dish.

    • Thanks for your comment Diane, I’m working on a whole new way to get customers lots of recipes all season..as I agree with you! Having my daughter (who’s in Toronto) to give me tech help with it should speed the process up!
